Made In Mississippi Casserole

Hey y’all! Things have been super busy lately, and I thought I would share a casserole that is my go-to when things are rushed in the evening or unplanned. It’s not a decor post, but I know you will enjoy it.

When we lived in Mississippi there were some nights where we would get home super late. And, if you have children you know they are starving as soon as they walk through the door. So, one evening there was barely anything in the cabinets and I needed to come up with something quick. I needed a little vegetable, meat, and of course cheese.

As I grabbed 5 ingredients my husband asked me what I was making. I said, “I don’t know.” These are the moments where I know my husband gets scared because these “concoctions” have happened before and not for the good. But, in the end it was a crowd pleaser. I used the below ingredients, plus turkey burger. But, you can use any kind of meat really.

Literally that’s all you need. And, I bet the majority of you have all of this, plus a meat, in your kitchen right now. So, below is how you layer the dish in order of ingredients. I used a round dish here, but I normally use an 8 x 8 glass dish.

First, layer the dish with baked beans straight from the can.

Brown your meat and add on top of the baked beans.

Layer with cheese as much as your little heart desires.

After adding the cheese, crush up a sleeve or two of crackers and place in the oven at 350 for 5 minutes. Then take out the dish and pour 3 tbl spoons of butter on the top. Then return to the oven for about 10 minutes.

This recipe is not the healthiest but it’s a quick fix to a major supper problem. I hope you will try it and let me know how the recipe turned out. Thanks for visiting and I will see you around here Wednesday. Have a blessed week.
